Make a Broth with Scraps
Making veggie or meat broth is exceptionally easy! Broth adds flavor and nutrients to every dish from rice to marinades to sauces.
For a veggie broth, simply simmer the skins, ends, and remains of any vegetable you have on hand in water for up to 4 hours! You can even put them in your crock pot on high all day. This is a fantastic way to get the most out of veggies you have no use for, that are overripe, or that may be close to expiration. The best veggies for broth are: carrots, celery, onions, garlic, peppers and tomatoes.
For a meat broth, simply follow the same instructions for veggie broth, while using the bones and scraps of any meat you have. Bones add tremendous depth of flavor while providing supplemental protein and gelatin. Added tip: roast the bones before you simmer them to improve the flavor.
Add salt, pepper and herbs for a full bodied, flavorful and nutrient dense broth you can use immediately or freeze. Broth can be frozen in your ice cube trays, popped out and stored in the freezer for months.
